Sweetwater head chef Leigh Power builds on his passion for the hawker-style street market food that saw him head up the kitchen at Melbourne’s acclaimed Gingerboy restaurant for seven years. Leigh has devised a mouth-watering menu focused on substance over style for Sweetwater.
True to his name, Power’s share plates pack a punch with a diversity of flavours influenced by seasonal produce. With small dishes, including tempura cuttlefish with prickly ash, chilli, coriander and spring onion, to more substantial offerings, including roast duck with eggplant, shanghai noodle and aromatic Chinese wine, every palate will be delighted by his menu offerings.
